Corn and Black Bean Salad

I had a dinner  party over the weekend, and in addition to chicken, rice and salad, I wanted a summery side dish to serve. I love black bean salad but I'd never made it and didn't have a recipe. I found this dish at MyRcipes.com and was very pleased with the result, as were my guests!  It was so good, I thought I'd share it today. Enjoy!

Corn and Black Bean Salad

1/3 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 1/2 tablespoons fresh lime juice
1 teaspoon paprika
2 (15 1/2-ounce) cans black beans, rinsed and drained
2 cups frozen whole kernel corn, thawed 
1 large orange bell pepper, coarsely chopped 
1/3 cup chopped fresh cilantro
2 small jalapeño peppers, seeded and minced 
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper

Whisk together first 4 ingredients in a large bowl. Add beans and remaining ingredients; toss well to coat. Cover and let stand 1 hour, tossing occasionally.

Oh, that looks good! I love just about anything with black beans.

Never made corn & black bean salad, but this sounds really good. I might have to try it! I made the crock pot pork chops you posted a few months ago, and they were fantastic!

Having an aversion to anything bean related... I would probably substitute peas!
