Crock Pot Chicken Tacos

I've been looking for an easy chicken taco recipe and just found one at Spendwithpennies.com. This is super simple and prepared in the crock pot. That just happens to be my favorite kind of recipe. Can't wait to try it!


Ingredients
4 skinless boneless chicken breast halves
1 cup salsa
1 cup canned diced tomatoes with chiles
1 package taco seasoning mix
1/2 onion, diced

Instructions
Combine salsa, canned tomatoes, and taco seasoning.
Place onions & chicken in the slow cooker and top with tomato mixture.
Cook on low 7-8 hours or high 3-4 hours.

Remove chicken from slow cooker and shred. Return to slow cooker and stir in juices.
Serve in taco shells, on salads, pizzas or in bowls over rice!

Red Wine Braised Chicken

I’m always on the lookout for quick and easy recipes! This one is for the crock pot, which is always a plus for me. It's from Midwest Living and sounds wonderful! Think I’ll try it this week.
Red Wine Braised Chicken
Ingredients
·         1/2 large onion, chopped

·         pounds bone-in skinless chicken thighs

·         packet (1.3 oz) McCormick slow cookers red wine braised roast seasoning mix

·         cup small peeled baby carrots, halved

·         10 ounces white button mushrooms, quartered

·         bag (14.4 oz) frozen pearl onions, thawed

·         1/2 cup dry red wine

·         1/2 cup flat-leaf parsley, chopped

·         Mashed potatoes and green peas (optional)

Directions
1.       Coat slow cooker with nonstick cooking spray.
2.       Place chopped onion in slow cooker; season chicken with seasoning mix and place on top of onion. Add carrots, mushrooms and pearl onions. Pour red wine and 1/2 cup water over top.
3.       Cover and cook on HIGH for 6 hours or LOW for 8 hours.
4.       Stir in parsley and serve with mashed potatoes and peas, if desired.

Moroccan Spiced Chicken

Two teenagers are keeping me very busy, so I depend  on my crock pot more and more. Here's a recipe I found in a Kroger coupon booklet and tried last week. It's easy, very good, and just a little exotic. Enjoy!

Moroccan Spiced Chicken

2 T cumin
2 t coriander
2 lbs boneless chicken breasts
2 onions, chopped
4 carrots, chopped
4 parsnips, peeled and chopped
4 garlic cloves, minced
1 t cinnamon
1 28 oz. can diced tomatoes, drained
1 cup chicken stock
1/2 cup white wine
4 cups prepared couscous
chopped parsley for garnish

Combine all ingredients except couscous and parsley in the slow cooker. Stir to combine. Cook on LOW for 6-8 hours, until vegetables are tender and chicken is cooked through. Serve over warm couscous and garnish with parsley.
